Arugula Pepperoni Salad

 

INGREDIENTS


  • 2 tablespoons balsamic vinegar
  • 2 tablespoons olive or vegetable oil
  • 2 teaspoons honey
  • 1 teaspoon stoneground mustard
  • 1 clove garlic, minced
  • 4 cups arugula or baby spinach
  • ½ cup HORMEL® Pepperoni Minis
  • ¼ cup Parmesan cheese shavings
  • cup glazed pecans
  • Salt and freshly ground pepper, to taste

DIRECTIONS


1. To make dressing, in jar with tight-fitting lid, combine vinegar, oil, honey, mustard, garlic, salt and pepper. Shake until well mixed.
2. In salad bowl, toss together arugula, pepperoni, cheese and pecans. Drizzle with dressing.
