Asian-style Chicken Lettuce Wraps

INGREDIENTS
1 (3-ounce) package ramen noodles (discard seasoning packet) 1 (5-ounce) can HORMEL® Premium Chicken Breast, drained 1 cup diced cucumber ⅓ cup diced red bell pepper ⅓ cup HOUSE OF TSANG® Bangkok Peanut Sauce 8 leaves bibb lettuce Chopped peanuts Sliced green onions
DIRECTIONS
1. Prepare ramen noodles according to package directions; drain. Rinse under cold running water; drain again. 
2. In medium bowl, combine ramen, chicken, cucumber, bell pepper and peanut sauce; toss until ramen is coated. 
3. Divide ramen mixture evenly among lettuce leaves. Garnish with peanuts and onions.

Rated 4 out of 5 by from great dish I made this for the first time today. I made a double batch and used only 1 package of ramen noodles. It's spicy, but we like that. Next time i will use rice noodles.
