Beef Burrito Bowl with Cilantro Rice

INGREDIENTS


  • 1 (15-ounce) package HORMEL® Slow Simmered Beef Roast Au Jus
  • 1 (8.8-ounce) package UNCLE BEN’S® READY RICE® ORIGINAL LONG GRAIN & WILD
  • 2 teaspoons vegetable oil
  • 2 cups frozen bell pepper-onion blend
  • 1 cup frozen roasted or whole kernel corn
  • ½ teaspoon chipotle chili powder
  • 2 tablespoons fresh cilantro, chopped
  • 1 teaspoon lime zest, grated
  • 1 teaspoon fresh lime juice
  • 2 cups chopped Romaine lettuce or chopped baby spinach
  • 2 medium Roma tomatoes, chopped
  • 1 medium avocado, sliced
  • 4 teaspoons sour cream
  • 4 teaspoon Cotija cheese, crumbled

DIRECTIONS


1. Heat beef according to package directions.
2. Heat rice in microwave as directed on package.
3. While beef and rice are heating, in 10-inch nonstick skillet, heat oil over medium-high heat. Cook and stir pepper blend and corn 3 to 4 minutes or until crisp tender. Keep warm.
4. Remove beef from package into medium bowl. Stir in chili powder and 2 to 3 tablespoons au jus.
5. Fully open bag of rice. Using hot pad to hold bag, stir cilantro, lime zest and lime juice into rice.
6. Divide lettuce, rice, beef, pepper mixture, tomatoes, avocado, sour cream and cheese among 4 large soup bowls.
