Beet and Goat Cheese Salad

INGREDIENTS


  • 1 ½ pounds medium beets
  • ¼ cup chopped green onions
  • 4 cups fresh spinach, chopped
  • 4 ounces goat cheese, crumbled
  • 1/3 cup chopped pistachios, toasted
  • 2 tablespoons honey
  • 2 tablespoons champagne vinegar
  • 2 tablespoons olive oil
  • ½ teaspoon kosher salt
  • ¼ teaspoon freshly ground pepper
  • Garnish: fresh dill

DIRECTIONS


Heat oven to 400°F.
Wash and place beets on lightly greased baking sheet. Bake 40 minutes or until tender. Let cool completely. Peel and slice. In large bowl, toss beets, spinach, goat cheese and pistachios. In small bowl whisk together honey and next four ingredients. Drizzle honey mixture over beet mixture. Garnish with dill, if desired.
