INGREDIENTS


  • 1 tablespoon olive oil
  • ½ red bell pepper, sliced
  • ½ green bell pepper sliced
  • ½ small red onion, sliced
  • 1 cup cooked yellow rice
  • ½ cup HORMEL® Taco Meats Shredded Chicken
  • ¼ cup canned black beans, rinsed and drained
  • Garnish: guacamole, fresh cilantro sprigs, lime wedges.

DIRECTIONS


  1. In large skillet over medium heat, heat oil. Add bell peppers and onion and cook 3 minutes.
  2. Place rice in serving bowl. Top with pepper mixture.
  3. Heat chicken according to package directions. Place chicken over rice along with black beans. Garnish, if desired.
