INGREDIENTS


  • 1½ teaspoons olive oil
  • ½ medium onion, diced
  • ½ cup frozen corn
  • 1½ teaspoons cumin
  • 10 ounces VALLEY FRESH® Organic Chicken Breast, drained
  • 1 (15.5-ounce) can black beans, rinsed and drained
  • 1 (14.5-ounce) can diced tomatoes, drained
  • shredded cheese
  • Soft tortillas, rice or tortilla chips

DIRECTIONS


1. Heat olive oil in large skillet. Add onion and cook, stirring occasionally, for 2 to 3 minutes.
2. Add corn and cumin and cook for 1 minute.
3. Add chicken, black beans and tomatoes and cook 4 to 5 minutes, stirring occasionally.
4. Add cheese and cook to combine for one minute.
5. Serve on tortillas, rice or tortilla chips, if desired.
