INGREDIENTS


  • Cooking Spray
  • 1 (20-ounce) package refrigerated hash brown potatoes
  • 1/2 cup milk
  • 4 eggs
  • 1 (12-ounce) package HORMEL® CURE 81® Diced Ham
  • 1 cup shredded Cheddar cheese
  • 1 cup shredded Swiss cheese

DIRECTIONS


1. Heat oven to 425°F. Generously grease 12 regular-size muffin cups with cooking spray. Divide potatoes evenly between muffin cups. Bake 25 to 30 minutes or until crisp and golden brown. Reduce oven temperature to 350°F.
2. In bowl, beat together milk and eggs. Stir in ham and cheeses. Scoop mixture into muffin cups. 
3. Bake 18 to 20 minutes or until egg is set. Cool 5 minutes before removing from muffin cups.  Makes 12.
