Sweet Potato Casserole with Pecans

INGREDIENTS


  • 4 large sweet potatoes
  • ½ cup canned coconut milk
  • 1 cup pecans
  • 1 tablespoon coconut oil
  • 1-2 tablespoons maple syrup
  • 1 teaspoon cinnamon
  • ½ teaspoon nutmeg
  • juice of ½ orange
  • 1 teaspoon melted coconut oil

DIRECTIONS


1. Bring large pot of water to boil. Heat oven to 350°F. Peel and dice sweet potatoes.
2. Add sweet potato to water. Boil 10 minutes, or until tender.
3. Drain potatoes. Place back in large pot with remaining ingredients. Using a hand mixer, blend until potatoes reach desired consistency.
4. In small bowl, combine all topping ingredients until pecans are well coated.
5. Place sweet potato mixture into an oven safe dish and top with pecans.
6. Bake 15 minutes, or until topping is browned.
