INGREDIENTS
  • 5 pounds potatoes
  • 12- to 16-ounce pasteurized processed cheese, cubed
  • ¾ cup butter
  • ¾ cup chicken stock
  • 1 12-ounce container sour cream
  • 1 6-ounce package HORMEL® Pepperoni
  • ½ cup crushed pretzels
  • 1 cup shredded sharp Cheddar cheese
1. Preheat oven to 350°F.
2. Peel and cube potatoes. Boil for 10 minutes.
3. In large pan over medium heat combine processed cheese, butter and chicken stock. Whisk until cheese and butter are completely melted. Add sour cream to pan and stir until blended.
4. Drain potatoes and divide evenly into two 9X9-inch baking dishes.
5. Pour cheese mixture evenly over potatoes. Cover with aluminum foil, bake for 20 minutes.
6. In medium bowl, toss pepperoni, crushed pretzels and shredded cheese. 
7.  Remove cheesy potatoes from oven, uncover and top evenly with the crushed pretzel mixture.
8. Return dishes to oven for an additional 15 minutes or until cheese is melted. Serve warm.
