Turkey and Vegetable Soup

INGREDIENTS
1 tablespoon olive oil 1 medium red onion, diced 1 stalk celery, diced 1 red bell pepper, diced 2 garlic cloves, minced 1 poblano pepper, diced 4 packets HERB-OX® Sodium Free Granulated Chicken Bouillion 4 cups water 1 cup frozen corn kernels 2½ cups shredded cooked turkey ½ teaspoon salt ½ teaspoon ground pepper ½ teaspoon crushed red pepper flakes Chopped cilantro, for garnish
DIRECTIONS
1. Heat olive oil in large saucepan over medium heat. Add onion, celery, red bell pepper, garlic, and poblano pepper. Cook 5 minutes or until vegetables are soft.
2. Pour in water and chicken broth packets and bring mixture to a boil. Reduce heat and simmer 10 minutes.
3. Add corn and simmer for 3 minutes longer.
4. Stir in turkey and simmer until heated through. Season to taste with salt, pepper and red pepper flakes. Garnish with cilantro.
