INGREDIENTS

1 package HORMEL® Slow Simmered Beef Roast Au Jus

1 pound small round red potatoes

3 medium carrots

1 tablespoon cooking oil

Freshly ground black pepper

3 tablespoons chopped fresh Italian (flat-leaf) parsley

3 to 6 cloves garlic, minced

1 tablespoon finely shredded lemon peel

DIRECTIONS

In large skillet cook beef roast, covered, over medium heat for 10 minutes. Uncover and simmer for 5 minutes more, until juices are slightly reduced. Meanwhile, quarter potatoes. Peel and diagonally slice carrots in 3/4-inch pieces. Place vegetables in microwave-safe dish. Drizzle with cooking oil and sprinkle with pepper; toss to coat. Tightly cover with lid or plastic wrap. Microwave on high (100% power) for 10 minutes or until tender.

For herb-garlic mixture, in a small bowl combine parsley, garlic, and lemon peel. To serve, stir vegetables into skillet with beef and juices. Divide among serving dishes. Sprinkle with herb-garlic mixture. Makes 4 servings


Time Saving Tip: Reduce prep time on this recipe by microwaving the beef roast for 4 minutes rather than cooking it in the skillet for 10 minutes. Then, place in a skillet and follow directions as written.

Smoky Mac & Cheese with Peas

INGREDIENTS

1 21-ounce package HORMEL® COUNTRY CROCK® Elbow Macaroni and Cheese

½ cup frozen peas

¼ cup panko bread crumbs

2 tablespoons grated Asiago or Parmesan cheese (½ ounce)

¼ teaspoon smoked paprika

⅛ teaspoon cayenne pepper (optional)

DIRECTIONS

Preheat oven to 350°F. Spoon macaroni and cheese into a 1-quart casserole dish. Stir in the frozen peas and (if using) cayenne pepper.

In a small bowl combine the bread crumbs and Asiago cheese. Sprinkle bread crumb mixture over macaroni and cheese mixture. Sprinkle with smoked paprika.

Bake about 20 minutes or until warmed through and crumbs are golden.

Serves 4.

Balsamic Honey Pulled Pork Sliders

with LLOYD'S® seasoned & Shredded Pork

INGREDIENTS

1 large sweet onion, thinly sliced

1 (16-ounce) container LLOYD'S® Seasoned & Shredded Pork in Original BBQ Sauce

2 tablespoons balsamic vinegar

2 tablespoons honey

8 whole wheat cocktail-size buns or small round dinner rolls, split and toasted

1 tablespoon butter

1 tablespoon cooking oil

DIRECTIONS

In large skillet, melt butter over medium heat; add oil and heat until both are hot. Add onions and cook and stir 10 minutes or until onions are just beginning to brown. Reduce heat to medium low and continue to cook and stir 10 to 15 minutes or until onions reach a light caramel color.

Meanwhile, prepare LLOYD'S® Seasoned Shredded Pork in Original BBQ Sauce according to package directions, except carefully stir in balsamic vinegar and honey halfway through cooking.

Fill buns with shredded pork and caramelized onions. Makes 4 servings.

4 hoagie buns, split and toasted

INGREDIENTS

2 slices bread

1 to 2 tablespoons pizza sauce, plus extra to serve

¼ cup HORMEL® Pepperoni Original slices

2 slices mozzarella cheese

2 slices green bell pepper

DIRECTIONS

Spread 1 slice bread with pizza sauce. Top with pepperoni slices, cheese and bell pepper. Top with remaining bread slice. Place in hot panini press or two-sided grill.

Cook 2 to 3 minutes or until bread is golden and filling is hot. Cut in half to serve. Serve with extra pizza sauce, if desired. Makes 1.
