Garden Fresh Fettuccine Alfredo

Ingredients:

  • 1 package Hormel® Always Tender® Lemon Garlic Pork Loin Filet, cut into thin strips
  • 1 tablespoon Carapelli Light Olive Oil
  • 2 (9-ounce) packages refrigerated fettuccine
  • 3 cups cut-up fresh vegetables
  • 1 (10-ounce) jar Alfredo sauce

Directions:

  1. In large skillet, sauté pork in oil until cooked through. Remove from heat.
  2. Meanwhile, in large pot of boiling salted water, cook fettuccine according to package directions, adding vegetables during last 2 minutes of cooking; drain.
  3. In small saucepan, heat Alfredo sauce.
  4. In large serving dish, toss together fettuccine mixture, pork and Alfredo sauce.

Notes:


  1. Try using a combination of egg and spinach noodles in place of the fettuccine.
