Ingredients:
- 1 (17-ounce) package HormelĀ® Family Pack Beef Roast Au Jus Entree
- 8 slices garlic Texas toast
- 1/2 pound asparagus, trimmed and cut into 3-inch lengths
- 1 small red onion, cut into thin wedges
- 2 tablespoons Carapelli Light Olive Oil
- 2 tablespoons Carapelli Balsamic Vinegar
- 1/4 teaspoon salt
- 1/4 teaspoon cracked black pepper
Directions:
- Remove roast from package, reserving juices. Thinly slice roast.
- Prepare Texas toast according to package directions.
- In skillet, cook asparagus and onion in oil over medium-high heat 4 to 5 minutes or until tender. Sprinkle with vinegar, salt and pepper. Add sliced roast; cook 1 to 2 minutes longer or until heated thoroughly.
- Divide roast, asparagus and onion among 4 slices Texas toast; cover with remaining slices Texas toast.
- In microwave-safe measuring glass, pour reserved meat juices. Microwave on HIGH (100%) 1 minute or until juices come to a boil. Serve au jus with sandwiches for dipping.
Notes:
- The HORMELĀ® beef roast au jus also tastes great served with the balsamic glazed asparagus and garlic toast on the side.
