Balsamic Glazed Asparagus and Beef Au Jus

Ingredients:

  • 1 (17-ounce) package HormelĀ® Family Pack Beef Roast Au Jus Entree
  • 8 slices garlic Texas toast
  • 1/2 pound asparagus, trimmed and cut into 3-inch lengths
  • 1 small red onion, cut into thin wedges
  • 2 tablespoons Carapelli Light Olive Oil
  • 2 tablespoons Carapelli Balsamic Vinegar
  • 1/4 teaspoon salt
  • 1/4 teaspoon cracked black pepper

Directions:

  1. Remove roast from package, reserving juices. Thinly slice roast.
  2. Prepare Texas toast according to package directions.
  3. In skillet, cook asparagus and onion in oil over medium-high heat 4 to 5 minutes or until tender. Sprinkle with vinegar, salt and pepper. Add sliced roast; cook 1 to 2 minutes longer or until heated thoroughly.
  4. Divide roast, asparagus and onion among 4 slices Texas toast; cover with remaining slices Texas toast.
  5. In microwave-safe measuring glass, pour reserved meat juices. Microwave on HIGH (100%) 1 minute or until juices come to a boil. Serve au jus with sandwiches for dipping.
