  • 1 tablespoon vegetable oil
  • 1 cup sliced green bell pepper
  • 1 cup sliced fresh mushrooms
  • 1/2 cup sliced red onion
  • 1 teaspoon minced garlic
  • 6 large eggs, beaten
  • 6 fajita-size flour tortillas
  • 1 1/2 cups shredded Colby Jack cheese
  • 1 cup Hormel® Canadian Style Bacon, diced
  • 1 cup CHI-CHI'S® 16 oz Thick & Chunky Salsa Medium
  • Sour cream

    Heat oven to 350ºF. Lightly grease 13x9-inch baking pan.

    In large skillet, heat oil over medium-high heat. Add bell pepper, mushrooms, onion and garlic. Cook, stiiring occasionally, 5 to 8 minutes or until tender. Remove from skillet.

    In same skillet, add eggs; cook, stirring occasionally, 3 to 4 minutes or until soft scrambled. Stir in vegetables.

    Spoon egg mixture down center of each tortilla. Sprinkle with cheese and Canadian bacon. Roll up. Place seam-side-down in baking pan.

    Bake burritos 5 to 8 minutes or until hot. Serve with salsa and sour cream.
