Prepare grill for medium-hot coals.

In small saucepan, heat oil. Add onion; sauté 2 to 3 minutes or until tender. Stir in maple syrup, vinegar, mustard, soy sauce and pepper; simmer gently, stirring occasionally, 10 minutes. Remove from heat.

Grill pork chops 12 to 15 minutes or until nicely browned. During last couple of minutes, brush generously with glaze, turning frequently to glaze evenly.
