Prepare grill for smoking.

Smoke pork 18 to 20 minutes per pound or until internal temperature reaches 160°F.

Meanwhile, in large nonstick skillet, sauté onion and bell pepper 8 minutes or until softened and onion is slightly golden.

Slice smoked pork into 1/4-inch slices.

Layer bottom halves of rolls evenly with cheese, pork and sautéed vegetables. Cover with top halves of rolls.
