  • 1 (15-ounce) package Hormel® Beef Roast Au Jus Entree
  • 1 tablespoon vegetable oil
  • 1 medium green, yellow or red bell pepper, chopped
  • 1/2 cup diced red onion
  • 1 cup shredded Cheddar cheese
  • 8 (5- to 6-inch) corn or flour tortillas, heated

    Prepare beef roast au jus according to package directions.

    Meanwhile, in skillet, heat oil over medium heat. Add bell pepper and onion; sauté 5 minutes or until slightly softened. Transfer mixture to serving bowl.

    In separate bowl, shred roast with fork. Arrange bowls of shredded beef, sautéed vegetables and cheese next to plate of warm tortillas.

Notes:

  1. Serve these rollups with your favorite salsa for that extra zing.
