  • 1/2 cup olive oil, divided
  • 1 Hormel® Always Tender® Original Flavor Pork Tenderloin, cut into cubes
  • 3 cups orzo, cooked, drained and rinsed with hot water
  • 1 (11.1-ounce) jar Peloponnese® Kalamata Pitted Olives, drained and coarsely chopped
  • 1/2 cup lemon juice

    In large skillet, heat 2 tablespoons oil over medium-high heat. Add pork; cook, stirring frequently, 3 minutes or until browned. Reduce heat to medium; cover. Cook 5 minutes longer or until internal temperature of pork reaches 155ºF.

    Meanwhile, in salad bowl, stir together orzo and olives.

    To make dressing, in small jar, combine lemon juice and remaining 6 tablespoons oil; cover tightly. Shake to blend.

    Add pork and dressing to orzo mixture; toss gently.
