In large skillet, heat 2 tablespoons oil over medium-high heat. Add pork; cook, stirring frequently, 3 minutes or until browned. Reduce heat to medium; cover. Cook 5 minutes longer or until internal temperature of pork reaches 155ºF.

Meanwhile, in salad bowl, stir together orzo and olives.

To make dressing, in small jar, combine lemon juice and remaining 6 tablespoons oil; cover tightly. Shake to blend.

Add pork and dressing to orzo mixture; toss gently.
