Coat 13x9-inch microwave-safe baking dish with cooking spray.

To make stuffing, in bowl, combine pepperoni and cheese; mix well.

Slice down center of each zucchini, end to end. With tip of teaspoon, remove some of zucchini flesh down inside center of each half, forming groove to hold stuffing. Divide stuffing evenly among zucchini halves. Place zucchini halves stuffing-side-up in baking dish.

Loosely cover baking dish with paper towels. Microwave on HIGH (100%) 2 minutes. Check for tenderness; microwave in 30-second intervals until filling is steamy and zucchini is very tender. Let stand 2 minutes to allow flavors to develop.
