  • 6 large eggs
  • 2 tablespoons water
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 tablespoon butter or margarine
  • 1 (15-ounce) can Hormel® Roast Beef Hash
  • 1/3 cup chopped green bell pepper
  • 1/2 teaspoon chili powder
  • 1/2 cup shredded Monterey Jack cheese

    Heat oven to 400°F. Lightly grease ovenproof plate or baking sheet.

    In medium bowl, beat together eggs, water, salt and black pepper.

    In large omelet pan or skillet, melt butter over low heat. Pour in egg mixture. Cook 6 to 8 minutes, pushing edge in toward center as mixture sets. Tilt and turn pan as necessary so uncooked portion flows to edge. When surface is set but still moist, slide omelet onto plate or baking sheet.

    In medium bowl, stir together hash, bell pepper and chili powder; spoon evenly over omelet. Bake 10 minutes. Sprinkle with cheese. Bake 5 minutes longer or until cheese is melted.
