  • 1 1/2 cups cooked rice
  • 1 (16-ounce) can kidney beans, drained and rinsed
  • 3/4 cup sliced celery
  • 1/4 cup chopped green bell pepper
  • 1/4 cup chopped green onions
  • 2 tablespoons Peloponnese® Roasted Red Peppers Whole, diced
  • 2 tablespoons cider vinegar
  • 2 tablespoons sugar
  • 2 tablespoons Carapelli Extra Virgin Olive Oil
  • 1/2 teaspoon paprika
  • 1 (5-ounce) can Hormel® Chunk Breast of Chicken, drained and flaked
  • 1/2 cup Hormel® Real Bacon Bits
Instructions

    In large bowl, combine rice, beans, celery, bell pepper, onions and roasted peppers.

    In small saucepan, whisk together vinegar, sugar, oil and paprika; bring to a boil. Pour over rice mixture; toss. Cover; refrigerate several hours or overnight.

    Stir chicken and bacon bits into salad before serving.
