Spread cut sides of rolls with mustard. Place 2 ounces turkey on bottom half of each roll. Top each with 2 halves Swiss cheese, 2 ounces ham and 2 halves Monterey Jack cheese. Spoon relish evenly over cheese; cover with top halves of rolls.

For toasted panini-style sandwich, heat panini grill according to manufacturer's directions.

Lightly brush outside of each sandwich with olive oil or coat lightly with cooking spray. Cook each sandwich on panini grill according to manufacturer's directions until sandwich is toasted and cheese is melted. Cut each sandwich diagonally in half.
