  • 1/2 pound sugar snap peas
  • 1 small red onion, chopped
  • Butter
  • Thyme and other fresh herbs

    Prepare pork medallions according to package directions.

    Meanwhile, steam sugar-snap peas until crisply-tender.

    In small skillet, melt butter. Add onion; sauté.
