  • 6 (6-inch) flour tortillas
  • 12 large eggs
  • 2 cups shredded zesty Mexican cheese blend, divided
  • 1 (3-ounce) jar Hormel® Real Bacon Bits, divided
  • 2 tablespoons butter or margarine
  • 1 cup CHI-CHI'S® 16 oz Thick & Chunky Salsa Medium

    Heat oven to 350ºF. Lightly grease 6 (10-ounce) custard cups.

    Place 1 tortilla in each custard cup. Bake 15 minutes.

    In large bowl, stir together eggs, 1 1/4 cups cheese and 1/2 cup bacon bits.

    In large nonstick skillet, melt butter over medium heat. Add egg mixture. Cook, without stirring, 4 to 6 minutes or until eggs begin to set. Draw spatula across bottom of skillet, lifting eggs and letting unset eggs flow to bottom of skillet. Cook until eggs are set but still moist.

    Spoon egg mixture into tortilla bowls. Top with salsa, remaining 3/4 cup cheese and remaining bacon bits. Serve immediately.
