1. Heat oven to 400°F. Arrange half of the tortilla chips in a large cast-iron skillet or 13x9-inch baking dish. Sprinkle with half of cheese; top with half of pepperoni, olives, green pepper and onion. Repeat with remaining ingredients.
2. Bake 8 to 10 minutes or until the cheese is melted and bubbly. Serve hot, sprinkled with cilantro or a squeeze of lime juice.
