Arugula-Mint-Orange Salad with Champagne Vinaigrette

Arugula-Mint-Orange Salad with Champagne Vinaigrette

 

SERVINGS: 8 servings

INGREDIENTS


  • 3 tablespoons champagne vinegar
  • 2 tablespoons honey
  • 1 teaspoon ground mustard powder
  • ¼ cup olive oil
  • ½ teaspoon kosher salt
  • ¼ teaspoon freshly ground pepper
  • 8 cups arugula
  • 2 oranges, peeled and sliced
  • ¼ cup toasted pistachios
  • ½ cup fresh mint leaves, torn

DIRECTIONS


In small bowl, whisk together champagne vinegar and next 5 ingredients. In large bowl or platter, place arugula leaves, top with orange slices and sprinkle with pistachios and mint leaves. Drizzle with vinaigrette.
