BLACK LABEL® Bacon Weave Turkey Breast



PREP TIME: 20 minutes

TOTAL TIME: 1 hour 10 minutes


1 tablespoon olive oil
1 tablespoon balsamic vinegar
1 teaspoon crushed dried rosemary
1 teaspoon dried thyme leaves
1 clove garlic, minced
1 teaspoon steak seasoning
1 teaspoon kosher salt 
1/2 teaspoon freshly ground black pepper
1 (1 ½ to 2 -pound) split turkey breast, bones and skin removed
16 slices HORMEL® BLACK LABEL® bacon 


1. In small bowl, stir together oil, vinegar, rosemary, thyme, garlic, steak seasoning, salt, and pepper. Rub turkey evenly with mixture.  Let sit 30 minutes at room temperature. 
2. Heat oven to 375°F.
3. Lay 8 bacon strips on a piece of parchment parallel to each other and just touching.  Fold every other strip halfway back onto itself.  Lay 1 strip of bacon perpendicular over the strips, snug against the folds, then unfold the strips again.  Fold back the opposite strips, place another bacon strip parallel to the first weave, then unfold the perpendicular strips again.  Repeat until you have woven in 8 strips.  
4. Lay turkey on end of bacon lattice closest to you. Gently, using parchment to help you, roll the bacon snugly around the turkey, positioning it seam side down. 
5. Place turkey seam side down in a large cast-iron skillet or other heavy ovenproof pan. Adjust the bacon so it is snug against the turkey. Roast 55 to 60 minutes or until 165°F as measured by a meat thermometer, and the bacon is browned and crisp. Remove from oven and let rest for 5 to 10 minutes before slicing.
