Chicken and Cashew Salad

 

Prepare this delicious salad the night before to make lunch a breeze.

INGREDIENTS


  • 2 cups rotini
  • 1 cup fresh peapods, cut into 1-inch pieces
  • 2 (10-ounce) cans HORMEL® Premium Chicken Breast, drained and flaked
  • 1 cup sliced celery
  • ½ cup chopped red onion
  • ½ cup shredded carrot
  • 1 cup mayonnaise
  • ½ cup packed brown sugar
  • 1 tablespoon cider vinegar
  • 1 teaspoon salt
  • 1 cup salted cashews

DIRECTIONS


1. Cook rotini according to package directions, adding peapods during last 2 minutes of cooking; drain. Cool.
2. In large bowl, toss together rotini mixture, chicken, celery, onion and carrot.
3. In separate bowl, combine remaining ingredients except cashews; toss with salad. Refrigerate several hours or overnight. Stir in cashews before serving.
