DIRECTIONS
- Heat olive oil in large skillet. Add onion and cook, stirring occasionally, for 2 to 3 minutes.
- Add corn and cumin and cook for 1 minute.
- Add chicken, black beans and tomatoes and cook 4 to 5 minutes, stirring occasionally.
- Add cheese and cook to combine for one minute.
- Serve on tortillas, rice or tortilla chips, if desired.
