Loaded Sweet Potato Skins
Loaded Sweet Potato Skins
SERVINGS:
4 servings
INGREDIENTS
4 medium sweet potatoes
1 tablespoon olive oil
1 cup chopped fresh pineapple
¼ cup red bell pepper, diced
2 tablespoons thinly sliced red onion
3 tablespoons chopped fresh cilantro leaves
3 tablespoons light brown sugar
2 tablespoons fresh lime juice
1 jalapeño, seeded and sliced
8 strips HORMEL® BLACK LABEL® Double Smoked bacon
DIRECTIONS
Heat oven to 400°F.
Rub potatoes with oil and pierce with fork. Place on foil-lined baking sheet and bake 1 hour or until tender.
Meanwhile, in small bowl, combine pineapple and 6 ingredients.
Cook bacon according to package directions; cool and crumble.
Cut slits in top of potatoes and fluff potato with a fork. Top with pineapple mixture and bacon.
