Loaded Sweet Potato Skins


SERVINGS: 4 servings


  • 4 medium sweet potatoes
  • 1 tablespoon olive oil
  • 1 cup chopped fresh pineapple
  • ¼ cup red bell pepper, diced
  • 2 tablespoons thinly sliced red onion
  • 3 tablespoons chopped fresh cilantro leaves
  • 3 tablespoons light brown sugar
  • 2 tablespoons fresh lime juice
  • 1 jalapeño, seeded and sliced
  • 8 strips HORMEL® BLACK LABEL® Double Smoked bacon


  1. Heat oven to 400°F.
  2. Rub potatoes with oil and pierce with fork. Place on foil-lined baking sheet and bake 1 hour or until tender.
  3. Meanwhile, in small bowl, combine pineapple and 6 ingredients.
  4. Cook bacon according to package directions; cool and crumble.
  5. Cut slits in top of potatoes and fluff potato with a fork. Top with pineapple mixture and bacon.
