Mediterranean-Style Pork Medallions with Couscous

INGREDIENTS


  • 1 (24-ounce) package HORMEL® Mediterranean Herb & Olive Oil Pork Loin Filet
  • Sun-dried tomato couscous
  • 1 cup ripe pear, skinned and diced
  • ¼ cup radishes, diced
  • 1 tablespoon fresh mint, diced
  • 1 teaspoon grated lime zest
  • 2 tablespoons lime juice
  • 1 teaspoon light olive oil
  • Sugar to taste

DIRECTIONS


1. Prepare filet according to package directions. Cut filet into medallions.
2. Serve over prepared couscous and top with pear radish relish.
 
*Pear Radish Relish:
1. In bowl, combine pear, radishes, mint, grated lime zest, lime juice, olive oil and sugar to taste.
