Peppercorn Spiced Pork Lo Mein

Peppercorn Spiced Pork Lo Mein

INGREDIENTS


  • 2-3 tablespoons vegetable oil
  • 1 (18.4-ounce) package HORMEL® Peppercorn Pork Tenderloin, sliced into medallions
  • 8 ounces Chinese or linguine noodles
  • 2 cups sliced cremini mushrooms
  • cup sliced green onions
  • 1 cup bottled teriyaki sauce

DIRECTIONS


In large skillet in 1 tablespoons of oil, sauté tenderloin  medallions until lightly browned and cooked to an internal temperature of 160°F. (NOTE: This may need to be done in two batches).  Remove tenderloin from skillet and set aside.  In same skillet, in remaining oil, sauté mushrooms.  Meanwhile, prepare noodles.  Drain noodles and toss with teriyaki sauce.  Serve pork medallions over noodles and top with sliced scallions.  Serves 4.
