INGREDIENTS
  • 1 cup sliced HORMEL® Pepperoni
  • 1 cup black olives
  • ¾ cup green olives
  • 1 (6-ounce) jar artichoke hearts, drained
  • ¼ cup sun dried tomatoes
  • 2 cloves garlic, peeled
  • ¼ teaspoon red pepper flakes, if desired
  • 1 tablespoon red wine vinegar
  • -½ cup olive oil
  • ¼ cup capers
  • Salt and pepper, to taste
Place pepperoni, olives, artichoke hearts, sun dried tomatoes, garlic and red pepper flakes in bowl of food processor. Pulse a few times until coarsely chopped.
Add red wine vinegar and ⅓ cup olive oil. Pulse a few more times. If desired, add additional olive oil until tapenade reaches desired consistency.
Pour tapenade mixture into bowl and stir in capers. Season with salt and pepper, to taste. Refrigerate until serving.
Serve tapenade with crusty baguette slices, chips, crackers or veggies.
