1. In small pan, heat up 2 tablespoons olive oil, minced garlic clove and 1/4 cup chopped cherry tomatoes. Continue to stir mixture over medium heat for about 8 minutes and then set aside.
2. Butter sandwich rolls, place one slice of cheese and broil until slightly toasted. In separate pan, broil desired amount of Hormel Pepperoni.
3. Once toasted spread the garlic mixture on the side of bread without cheese. Add the ham, spinach, sliced cherry tomatoes and Hormel Pepperoni. Add the garlic mixture to the top of the bun, sprinkle a little Parmesan cheese and serve.
