Pineapple Sweet Potato Casserole

INGREDIENTS


  • 2 ½ pounds sweet potatoes, peeled and cut into 1-inch pieces
  • ¾ cup firmly packed light brown sugar
  • 1 (8-ounce) can Dole® Pineapple Tidbits, drained
  • ¼ cup butter, softened
  • 1 teaspoon kosher salt
  • ½ teaspoon vanilla extract
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • Cooking spray
  • 2 cups miniature marshmallows (optional)

DIRECTIONS


Preheat oven to 375°.
In large Dutch oven, place sweet potatoes and cover with water. Bring to a boil. Reduce heat, and simmer 15 minutes or until tender. Drain; cool slightly.
In large bowl add potatoes, sugar and next 6 ingredients. Mash with potato masher. Transfer potato mixture to an 11 x 7-inch baking dish coated with cooking spray. Top with marshmallows, if desired. Bake at 375° for 25 minutes or until golden.
