Quick Bacon Potato Salad

INGREDIENTS


  • 1 (24-ounce) package red potatoes
  • 1 celery stalk, thinly sliced
  • 1 small red onion, cut into quarters and thinly sliced
  • ¾ cup salad dressing
  • 2 tablespoons yellow mustard
  • 1 tablespoon lemon juice
  • 1 teaspoon dried dillweed
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 3 hard-cooked large eggs, peeled and chopped
  • 1 (2.4-ounce) jar HORMEL® Real Bacon Pieces

DIRECTIONS


1. Cook potatoes according to package directions until tender; drain well. Cool and set aside.
2. In large bowl, combine celery, onion, dressing, mustard, lemon juice, dillweed, salt and pepper. Stir in cooled potatoes and eggs. Cover; refrigerate several hours. Stir in bacon pieces just before serving.
