INGREDIENTS
1 tablespoon butter
1/2 cup diced onions
1 bell pepper, diced (use red, yellow, orange or green or a combination)
8 eggs, beaten
Salt and pepper, to taste
1/2 cup
HORMEL® Jalapeo Flavored Real Crumbled Bacon
1 cup shredded pepper jack cheese
4 (8- to 9-inch) flour tortillas
1/2 cup prepared red salsa
DIRECTIONS
1. In large skillet over medium high heat, melt butter. Add diced onions and pepper. Sauté vegetables 5 minutes or until tender, stirring often.
2. Add eggs to vegetable mixture. Gently cook and stir until eggs are soft scrambled. Add salt and pepper to taste. Sprinkle bacon and cheese on top.
3. Spoon egg mixture down center of each tortilla. Spoon salsa over eggs and roll up, tucking in ends, if desired.
