Warm Spinach Salad with Pork Belly Bites 

Warm Spinach Salad with Pork Belly Bites

INGREDIENTS


1 (16-ounce) package BLACK LABEL® Pork Belly Bites, coarsely chopped
3 cloves garlic, minced
3 tablespoons maple syrup 
3 tablespoons Dijon mustard 
¼  cup apple cider vinegar
1 teaspoon pepper
1 teaspoon kosher salt
1 pound baby spinach
1 red apple, sliced
½ cup thinly sliced red onion
½ cup pecan halves, coarsely chopped and toasted 

DIRECTIONS


  1. To make dressing, in large skillet, over medium heat, cook pork belly bites 5 to 7 minutes or until crisp. Remove pork. Add garlic; cook 10 seconds. Remove from heat.
  2. Add maple syrup, mustard, vinegar, pepper and salt to skillet. Cook a few seconds or until flavors are blended.
  3. In bowl, toss together spinach, pork, apple, onion, pecans and dressing. Serve immediately.
