INGREDIENTS


  • 8 ounces rotini
  • 1 (5-ounce) package HORMEL® Pepperoni Minis
  • 4 ounces Provolone cheese, cut into ¼-inch cubes
  • 1 medium tomato, diced
  • 1 green bell pepper, diced
  • 1 (2.25-ounce) can sliced ripe olives, drained
  • 1 tablespoon grated Parmesan cheese
  • ¾ cup Italian salad dressing

DIRECTIONS


1. Cook rotini according to package directions; drain.
2. In large bowl, combine rotini and remaining ingredients except dressing.  Toss pasta salad with dressing.
Rated 5 out of 5 by from EZ and DELISH This is one super easy and very yummy salad. However, I must substitute cucumbers for the black olives (black olives are one of the few foods I just can not stomach), the bonus is that the cukes give salad a nice crunch. I like to also add a yellow, orange or red pepper for even more crunch and of course more color. It's hearty enough as a meal with just some bread on the side, our family always tears it up and we never have any leftovers, unfortunately.

Rated 5 out of 5 by from Summer Meal This is a great dish for hot summer meals. I have made this 3 times now when the temperature was up in the high 80's and the humidity was sticky! I made it a little different each time. I never have green peppers, so I don't use them. Still good. I use green olives instead of black. Didn't like the taste of the black olives. The green add of little more tang to it. And, make my own Italian Dressing. This recipe is easily becoming a family Summer favorite.
