Italian Breakfast Burrito

  • 10 slices HORMEL® Pepperoni
  • 3 tablespoons butter, divided
  • 2 tablespoons diced green bell pepper
  • ¼ cup shredded mozzarella cheese
  • 3 eggs
  • 1 large flour tortilla


  1. Begin by placing the pepperoni in a pan over a medium heat and allow it to cook until the oil is released and the pepperoni becomes crisp, about 30 seconds. Remove from the pan and set aside.
  2. Sauté green peppers in 1 tablespoon butter.
  3. Once peppers are sautéed, scramble eggs in remaining butter. Stir in cheese.
  4. Layer eggs, sautéed peppers, pepperoni and mozzarella cheese on tortilla. Place under a broiler for about 2 minutes until the cheese begins to melt. Fold the tortilla to make a burrito.
