Ingredients

 
10 slices HORMEL® Pepperoni
3 tablespoons butter, divided
2 tablespoons diced green bell pepper
3 eggs, lightly beaten
¼ cup shredded mozzarella cheese
1 large flour tortilla

Directions

  1. In medium skillet over medium heat place pepperoni slices. Cook 30 to 40 seconds, flipping halfway through, until pepperoni is crisped. Remove from pan.

  2. In same skillet, add 1 tablespoon butter. Cook green peppers 1 to 2 minutes or until beginning to soften. Remove from pan.

  3. In same skillet, melt remaining butter. Scramble eggs.

  4. Layer eggs, peppers, pepperoni and cheese on tortilla. Roll up to serve.
