Garnished with fresh cilantro, these enchiladas are perfect for a weeknight dinner or a fun family meal. The combination of chicken, cheese and enchilada sauce give them a satisfying savory flavor.
|1||(28-ounce) can LA VICTORIA® Enchilada Sauce|
|1||cup CHI-CHI’S® Thick and Chunky Salsa|
|3||(10-ounce) cans HORMEL® Premium Chicken Breast, drained|
|10||small flour tortillas|
|2||cups shredded mild Cheddar cheese|
|2||green onions, chopped|
|2||tablespoons chopped cilantro|
Heat oven to 350°F.
In bowl, combine enchilada sauce and salsa.
In another bowl, combine chicken and 1 cup enchilada sauce mixture.
Spread 1 cup of enchilada sauce mixture in 9×13-inch pan. Spread 2 tablespoons chicken mixture in middle of each tortilla. Top with 1 tablespoon shredded cheese. Roll and place seam-side down in pan. Repeat with remaining tortillas.
Cover with remaining sauce mixture, cheese and green onions.
Bake 45 minutes.
Remove from oven and sprinkle with cilantro.
