|3||tablespoons butter, divided|
|2||tablespoons diced green bell pepper|
|3||eggs, lightly beaten|
|¼||cup shredded mozzarella cheese|
|1||large flour tortilla|
In medium skillet over medium heat place pepperoni slices. Cook 30 to 40 seconds, flipping halfway through, until pepperoni is crisped. Remove from pan.
In same skillet, add 1 tablespoon butter. Cook green peppers 1 to 2 minutes or until beginning to soften. Remove from pan.
In same skillet, melt remaining butter. Scramble eggs.
Layer eggs, peppers, pepperoni and cheese on tortilla. Roll up to serve.
