Ingredients

Vinaigrette
¼ cup olive oil
1½ tablespoons lemon juice
1 tablespoon red wine vinegar
½ shallot, finely chopped
1 garlic clove, finely chopped
1 tablespoon dried oregano
½ teaspoon salt
Freshly ground black pepper
Salad
1 small head iceberg lettuce, cored and sliced
1 head radicchio, cored and sliced
1 pint cherry tomatoes, halved
1 can chickpeas, rinsed and drained
1 (6-ounce) package HORMEL® Pepperoni 50% Less Sodium*, sliced
4 ounces fresh bocconcini mozzarella balls, drained
4 ounces provolone cheese, diced
½ small red onion, thinly sliced
¼ cup sliced pepperoncini
Salt and freshly ground black pepper, to taste

Directions

For the Vinaigrette

  1. In small bowl, whisk together Vinaigrette ingredients.

For the Salad

  1. In large bowl, combine lettuce, radicchio, tomatoes, chickpeas, pepperoni, mozzarella, provolone, onion and pepperoncini. Drizzle with dressing and toss gently to coat. Season with salt and pepper and toss again.
