1 tablespoon butter
2 tablespoons thinly sliced red onion
15 slices HORMEL® Pepperoni 50% Less Sodium
2 eggs, whisked
1 tablespoon shredded mozzarella cheese
2 teaspoons finely chopped chives, if desired
Crushed red pepper flakes, if desired


  1. Heat broiler to HIGH.

  2. In small broiler-safe nonstick skillet, over medium heat, melt butter. Add red onion. Cook 2 to 3 minutes or until tender. Add pepperoni slices. Cook 1 to 2 minutes or until pepperonis begin to curl and crisp.

  3. Add eggs. Using a rubber spatula, lift edges as egg cooks to allow more egg to run under and around sides, tilting pan as needed. Cook 1 to 2 minutes or until almost set. Sprinkle with cheese.

  4. Place under broiler. Broil 20 to 30 seconds or until cheese is melted and top is set.

  5. Garnish with chives if desired. Serve with crushed red pepper if desired.
