INGREDIENTS


  • 1 medium head cauliflower, cut into 1-inch florets
  • 1¼ teaspoons kosher salt, divided
  • ¼ cup butter
  • ¼ cup all-purpose flour
  • 2 cups milk
  • 2 teaspoons mustard powder
  • ¼ teaspoon freshly ground pepper
  • 1½ cups shredded Cheddar cheese, divided
  • ½ cup HORMEL® Real Bacon Bits

DIRECTIONS


Heat oven to 400°F.
Spread florets in lightly greased, 2-quart baking dish. Sprinkle with ¼ teaspoon salt. Bake 10 minutes. Reduce oven temperature to 350°F.
Meanwhile, in medium saucepan, melt butter over medium heat. Whisk in flour; cook 1 minute, whisking constantly. Slowly add milk, whisking constantly. Bring mixture to a boil. Reduce heat to medium-low. Stir in mustard powder, remaining 1 teaspoon salt, and pepper. Gradually add 1¼ cups cheese, whisking until smooth.
Pour cheese sauce over cauliflower. Sprinkle with remaining ¼ cup cheese and bacon bits.
Bake 30 minutes or until bubbly.
