Bacon and Corn Griddle Cakes


SERVINGS: 4 servings


  • 2 cups cornmeal mix
  • 2 cups buttermilk
  • ¾ cup fresh corn kernels
  • ¼ cup chopped green onion
  • ¼ cup melted butter
  • 4 slices HORMEL® BLACK LABEL® Double Smoked bacon, cooked and crumbled
  • 2 tablespoons chipotle peppers in adobo sauce, minced
  • Maple syrup, if desired


  1. Garnish: cooked and crumbled HORMEL® BLACK LABEL® double smoked bacon, fresh chives
  2. In large bowl, combine cornmeal mix and next 6 ingredients.
  3. Prepare griddle for medium heat. Spoon ¼ cup of mixture onto hot griddle and cook 2 to 3 minutes. Flip and cook 2 minutes.
  4. Serve maple syrup over corn cakes. Garnish with chopped, cooked bacon, if desired.
