Bacon and Corn Griddle Cakes
SERVINGS:
4 servings
INGREDIENTS
2 cups cornmeal mix
2 cups buttermilk
¾ cup fresh corn kernels
¼ cup chopped green onion
¼ cup melted butter
4 slices HORMEL® BLACK LABEL® Double Smoked bacon, cooked and crumbled
2 tablespoons chipotle peppers in adobo sauce, minced
Maple syrup, if desired
DIRECTIONS
Garnish: cooked and crumbled HORMEL® BLACK LABEL® double smoked bacon, fresh chives
In large bowl, combine cornmeal mix and next 6 ingredients.
Prepare griddle for medium heat. Spoon ¼ cup of mixture onto hot griddle and cook 2 to 3 minutes. Flip and cook 2 minutes.
Serve maple syrup over corn cakes. Garnish with chopped, cooked bacon, if desired.
