Canadian Bacon and Vegetable Hash

INGREDIENTS


  • 1 (6-ounce) package HORMEL® BLACK LABEL® Canadian Bacon Thick Slices, coarsely chopped
  • 2 tablespoons olive oil
  • 1 medium-size red onion, chopped
  • 1 medium-size sweet potato, peeled and cut into ½-inch cubes
  • 2 medium turnips, peeled and cut into ½-inch cubes
  • 1 pound small fresh Brussels sprouts, quartered
  • 2 garlic cloves, sliced 

DIRECTIONS


Heat oil in 12-inch cast-iron skillet over medium heat.  Add bacon, turning occasionally, 8 to 10 minutes or until lightly browned. Remove bacon.
Cook onions and sweet potatoes in hot oil, stirring occasionally, 5 minutes. Add turnips, Brussels sprouts and garlic; cook, stirring occasionally, 8 minutes.
Stir in bacon; add salt and pepper to taste.
