Ingredients
| 1 | medium head cauliflower, cut into 1-inch florets |
| 1¼ | teaspoons kosher salt, divided |
| ¼ | cup butter |
| ¼ | cup all-purpose flour |
| 2 | cups milk |
| 2 | teaspoons mustard powder |
| ¼ | teaspoon freshly ground pepper |
| 1½ | cups shredded Cheddar cheese, divided |
| ½ | cup HORMEL® Real Bacon Bits |
Directions
Heat oven to 400°F.
Spread florets in lightly greased, 2-quart baking dish. Sprinkle with ¼ teaspoon salt. Bake 10 minutes. Reduce oven temperature to 350°F.
Meanwhile, in medium saucepan, melt butter over medium heat. Whisk in flour; cook 1 minute, whisking constantly. Slowly add milk, whisking constantly. Bring mixture to a boil. Reduce heat to medium-low. Stir in mustard powder, remaining 1 teaspoon salt, and pepper. Gradually add 1¼ cups cheese, whisking until smooth.Pour cheese sauce over cauliflower. Sprinkle with remaining ¼ cup cheese and bacon bits.
Bake 30 minutes or until bubbly.
