Cheesy Bacon and Egg Scramble

Cheesy Bacon and Egg Scramble

 

SERVINGS: 4 servings

INGREDIENTS


  • 1 cup chopped HORMEL® BLACK LABEL® Canadian Bacon Thick Slices
  • 10 large eggs, lightly beaten
  • 2 tablespoons butter
  • cup shredded American cheese
  • 2 tablespoons chopped fresh chives

DIRECTIONS


In medium skillet over medium heat, cook bacon until lightly browned.
In large bowl, whisk together eggs and 3 tablespoons water.
In large non-stick skillet, melt butter over medium-low heat. Add eggs and let stand 1 minute or until eggs begin to set. With rubber spatula, scrape bottom and allow eggs to cover skillet. Gently stir after 30 seconds. Repeat process until eggs are cooked partially. Stir in cheese and bacon, continuing to stir gradually. Sprinkle with chives, and salt and pepper to taste.
