Chicken Salad Sandwich

INGREDIENTS


  • 2 (5-ounce) cans VALLEY FRESH®100% Natural Chicken Breast, well drained
  • ⅓ cup finely chopped red and/or yellow bell pepper
  • ¼ cup finely chopped red onion
  • ¼ cup chopped roasted cashews
  • ¼ cup plain Greek yogurt
  • 3 tablespoons mayonnaise
  • 1 tablespoon finely chopped fresh dill
  • 1 teaspoon hot pepper sauce
  • ½ teaspoon grated lemon peel
  • Coarse salt and freshly ground pepper to taste

DIRECTIONS


  1. Mix chicken, bell pepper, onion and cashews in a medium bowl. Stir in yogurt, mayonnaise, dill, hot pepper sauce, lemon peel, salt and pepper until well blended.
  2. Serve in sandwiches, on flatbread or a salad on greens or stuffed into a large tomato.
